PERHITUNGAN PENINGKATAN NILAI JUAL UBI KAYU MENJADI BERBAGAI MACAM OLAHAN MAKANAN
Abstract
Program pengabdian masyarakat ini bertujuan untuk meningkatkan nilai jual ubi kayu mentah menjadi produk olahan bernilai ekonomi tinggi di Kelurahan Bukit Lama, Kota Palembang. Isu utama yang diangkat adalah rendahnya pendapatan masyarakat akibat ketergantungan pada penjualan ubi kayu dalam bentuk mentah dengan harga hanya sekitar Rp1.200/kg. Fokus kegiatan adalah pengembangan keterampilan masyarakat dalam mengolah ubi kayu menjadi berbagai produk pangan seperti keripik, brownies mocaf, tiwul instan, dan tape singkong. Target sasaran meliputi ibu rumah tangga pelaku UMKM, petani lokal, dan Karang Taruna yang aktif dalam kewirausahaan komunitas. Tujuan inisiatif ini adalah menciptakan model pemberdayaan ekonomi berbasis potensi lokal yang berkelanjutan. Metode yang digunakan adalah Participatory Action Research (PAR), yang melibatkan masyarakat dalam setiap tahapan kegiatan mulai dari identifikasi kebutuhan, pelatihan, hingga evaluasi. Strategi yang diterapkan mencakup pelatihan pengolahan pangan, pemasaran digital, serta pembentukan kelompok usaha bersama. Hasil kegiatan menunjukkan peningkatan signifikan pada harga jual produk olahan menjadi Rp4.000/kg, terbentuknya dua UMKM baru, meningkatnya partisipasi perempuan dalam kegiatan ekonomi, serta peningkatan literasi digital komunitas sebesar 62% dalam pemasaran daring. Pendekatan partisipatif terbukti efektif dalam membangun kemandirian ekonomi lokal dan memperkuat jejaring sosial produktif masyarakat. Program ini memberikan bukti bahwa inovasi berbasis potensi lokal yang dikombinasikan dengan strategi pelatihan terstruktur dapat menciptakan transformasi ekonomi dan sosial yang berkelanjutan.
