Abstract

This study aims to describe the process of processing sugar cane into white crystal sugar at PT
Sinergi Gula Nusantara Cinta Manis Unit. The location was determined purposively. The method
used in this study is a case study. The type of data used consists of primary data and secondary
data. The data analysis method is done descriptively. The results of the study indicate that in the
process of making White Crystal Sugar at PT Sinergi Gula Nusantara Cinta Manis Unit, it is
carried out in several stages including weighing the sugar cane, then the sugar cane is placed in a
temporary storage area (cane yard), this cane yard uses a FIFO (First In First Out) system, which
prioritizes incoming sugar cane. After that, the sugar cane enters the milling station. After being
milled, the sugar cane then enters the refining stage/purification station. After the refining stage,
the sugar cane then enters the evaporation process stage at the evaporation station which aims to
reduce the water content and increase the brix in the sap. Then, it continues to the cooking process
stage until the final stage, namely packaging where one sack of sugar contains 50 kg of sugar
which is ready to be marketed to consumers.
